One Coffee, Three Grinds

A bag of coffee can be wonderfully expressive on Monday and oddly disappointing on Tuesday. Same beans. Same brewer. Same water. Same bleary-eyed person standing in the kitchen. What changed?

Sometimes, the answer is measured in fractions of a millimeter.

Grind size is one of the most powerful variables in coffee brewing, yet it is easy to treat the grinder as a set-it-and-forget-it appliance. A few clicks finer or coarser can shift a cup from thin and sharply acidic to sweet and balanced, or from pleasantly rich to aggressively bitter.

Fortunately, you don't need to understand extraction chemistry to see the difference. You just need three cups of coffee.


Why Grind Size Matters


Grinding does more than make whole coffee beans small enough to brew. It determines how much surface area of the coffee is exposed to water.

Imagine dropping a sugar cube into water versus stirring in the same amount of granulated sugar. The smaller particles offer far more surface area to the water and dissolve much more quickly. Coffee behaves somewhat similarly, although brewing involves extracting a complex mixture of compounds rather than simply dissolving sugar.

A finer grind exposes more of the coffee to water, allowing extraction to happen more quickly. A coarser grind exposes less surface area and generally slows the process.

This matters because coffee doesn't surrender all of its flavors at once. Different soluble compounds are extracted at different stages of brewing. If water doesn't extract enough from the grounds, the resulting coffee is under-extracted. If it pulls out too much, the cup can become over-extracted.

Somewhere between the two is the elusive cup we're after.

Try It Yourself


The easiest way to understand grind size is to taste its effects side by side.

Choose one coffee and one brewing method. A pour-over or automatic drip brewer works particularly well for this experiment. Keep everything else as consistent as possible: use the same coffee-to-water ratio, water temperature, brewing technique, and ideally water from the same source.

Then make three batches.

For the first, grind noticeably coarser than you normally would. For the second, use your usual grind setting. For the third, move noticeably finer.

You don't need laboratory precision. In fact, exaggerating the differences slightly makes the lesson easier to taste.

Let the coffees cool enough that you can comfortably taste them, then move back and forth among the three.

The differences may be larger than you expect.

Cup One: Too Coarse


Coffee ground too coarsely for a particular brewing method often produces a cup that feels incomplete.

You might notice pronounced acidity, but not necessarily the pleasant, fruit-like acidity celebrated in specialty coffee. Instead, the cup can seem sour, sharp, thin, or strangely hollow. Sweetness may be difficult to find, and the finish can disappear quickly.

These are common signs of under-extraction. The water simply hasn't had sufficient access to the coffee to extract enough of the compounds that provide sweetness, balance, and depth.

With a naturally fruity coffee, this can be particularly revealing. A flavor reminiscent of ripe peach at a more appropriate grind setting might become closer to an underripe fruit when ground too coarsely: recognizable, but sharper and less sweet.

Cup Two: The Sweet Spot


Now taste the coffee made with your middle setting.

Ideally, acidity is still present, but it has company. Sweetness becomes easier to identify. Aromas seem clearer. The coffee feels fuller and more complete, and its finish lasts longer without becoming harsh.

This is what we generally mean by a balanced extraction.

Importantly, "balanced" does not mean bland or perfectly neutral. A bright Ethiopian coffee should still taste bright. A chocolatey Central American coffee shouldn't suddenly lose its cocoa character. Good extraction allows the characteristics already present in the coffee to appear more clearly.

This is also where tasting notes can suddenly begin making more sense. Raspberry, citrus, caramel, florals, or cocoa may be difficult to recognize when the cup is dominated by sourness or bitterness. Balance gives those subtler impressions room to emerge.

Cup Three: Too Fine


Finally, move to the finest grind.

The coffee may initially seem impressively intense. But pay attention to what happens after you swallow.

An excessively fine grind can contribute to over-extraction, often bringing pronounced bitterness, dryness, or astringency. Instead of a clean finish, you may notice a lingering sensation similar to strong black tea or the drying quality of an underripe banana.

There is another complication: very fine particles can impede the flow of water through a filter bed. In a pour-over, that can lengthen brew time considerably, increasing extraction even further.

The result isn't simply "strong coffee." Strength describes concentration; extraction describes what was pulled from the grounds. A coffee can be strong and well extracted, weak and over-extracted, or any combination between.

Your Grinder Is a Flavor Control


The useful part of this experiment comes the next morning.

If your coffee tastes unexpectedly sour or thin, don't immediately blame the beans. Try grinding a little finer. If the cup is bitter, drying, and heavy, move a little coarser.

Make small adjustments rather than dramatic ones, and taste before changing another variable. Coffee brewing can quickly become confusing when grind size, temperature, ratio, and brew time are all adjusted simultaneously.

Eventually, the grinder begins to feel less like a preparation tool and more like what it really is: a flavor control.

The same beans have been sitting there all along. Sometimes they simply needed a click in the right direction.
